Split Pea Soup
Ingredients
-2 cups dried green split peas, rinsed
-7 cups of water
-3 tablespoons of vegetable bouillon
-2 medium potatoes, diced into medium/large pieces
-2 large carrots, coarsely chopped
-2 celery stalks, minced
-1 large onion coarsely chopped
-2 cloves garlic, minced
-2 teaspoons dried mustard
-½ teaspoon all spice
-1 teaspoon cumin
-1 teaspoon sage
-1 teaspoon thyme
-2 bay leaves
-Salt and pepper
Directions
-In a large pot, combine the peas and water
-Bring the peas and water to a boil
-Turn the heat to low and add all other ingredients
-Let soup simmer for 1 ½ -2 hrs
-Remove the bay leaves and serve
-Salt and pepper to taste
Kale and Lentil Soup
Ingredients
-8 cups vegetable broth
-1 ½ cups red lentils, rinsed
-2 carrots
-2 onions, minced
-1 bunch of kale (remove stem and chop medium size pieces)
-1 clove garlic, minced
-¼ teaspoon red pepper flakes
-1 tablespoon parsley
-Zest ½ lemon
-Salt and pepper
Directions
-In a large pot, add the vegetable broth, lentils, carrots, onions, kale, and garlic
-Bring to a boil and let cook until the lentils tender (15-20 minutes)
-Stir in the red pepper flakes, parsley, and lemon zest
-Salt and pepper to taste
-Serve and Enjoy
White Bean and Spinach Soup
Ingredients
-5 cups vegetable broth
-¼ cup extra virgin olive oil, divided
-1 medium onion, minced
-1 stalk celery, minced
-7 medium cloves garlic, minced
-1 tablespoon freshly chopped rosemary leaves
-1 bay leaf
-1 teaspoon dried basil
-1 15 ounce can white beans, drained and rinsed
-½ cup spinach, rinsed and trimmed
-2 teaspoons of fresh lemon juice
-Salt and pepper
Directions
-Heat two tablespoons of extra virgin olive oil in a medium sized sauce pan
-Add onions, celery, garlic, and rosemary
-Cook until onions have softened (not browned)
-Stir in broth, bay leaves, basil, and beans and bring to a boil
-Reduce to a simmer for 10 additional minutes
-Stir in spinach and cook until completely wilted
-Stir in lemon juice
-Salt and Pepper to taste
