  • Apple Cobbler



-4 ½ cups firm, tart apples, peeled, cored, and sliced

-2 tablespoons flour

-1 cup water

-1/3 cup white sugar

-⅓ cup dried cranberries

-¼ teaspoon cinnamon

-⅔ cup oats

-3 tablespoons melted margarine

-¾ cup brown sugar

-½ teaspoon salt (optional)



-In a mixing bowl, toss the apples in the flour and white sugar

-Mix in the oats, dried cranberries, and cinnamon

-Pour water into slow-cooker and add apple mixture

-Pour melted margarine over the apples

-Sprinkle the brown sugar over the apples

-Cover and cook on low for 4-6 hours

-Serve when apples are tender




  • Carrot Cake



-¼ cup applesauce

-¼ cup soy milk

-½ cup margarine, softened

-1 ¼ cups flour

-1 cup chopped walnuts

-1 cup grated carrots

-1 cup sugar

-2 tablespoons cinnamon

-1 teaspoon vanilla

-1 teaspoon salt

-1 ½ teaspoon baking powder


-Pre-heat oven to 325 degrees

-Lightly grease and flour a 9-inch square baking pan

-Combine all the ingredients (add carrots and walnuts last)

-Spread batter evenly in the baking pan

-Bake for 45 minutes




  • Pumpkin Pie



-2 10.5oz packages of silken tofu

-1 16oz can pumpkin

-1 pre-made pie crust

-1 teaspoon pure maple syrup

-¾ cup sugar

½ teaspoon nutmeg

-¼ teaspoon ginger

-¼ teaspoon allspice

-¼ teaspoon ground cloves


-Pre-heat oven to 375 degrees

-In a blender or food processor, process all ingredients until smooth (except for the pie crust)

-Pour filling into pre-made pie crust

-Bake for one hour (or until toothpick inserted into center comes out clean)

-Let the pie chill before serving (optional)
